Dietitian Teaches How to Make Delicious Gluten-Free Dishes

SCOTCH PLAINS – If you have celiac disease or cannot tolerate gluten, finding the right foods to eat can be a challenge. Registered Dietitian and Chef Diane Weeks will teach you how to prepare gluten-free meals and treats at a special program on January 26, 2010 at 7 pm at the RWJ Rahway Fitness & Wellness Center.

Gluten is a protein found in rye, wheat and barley that can result in a variety of problems for those with celiac disease and gluten intolerance. Many foods contain gluten, including a number of processed foods such as salad dressings, cold cuts, beer, flavored potato chips, some herbal teas and egg substitutes.

Ms. Weeks, who has taught multiple classes on gluten-free cooking at the Fitness Center, will focus on gluten-free grains, gluten-free meals and snacks. This free class will offer samples and recipes. The program is open to all.
